Healthy vegan oatmeal cups with turmeric and cinnamon. These vegan cups are perfect for breakfast or as a snack or when you crave something sweet.
I have always felt that baking on a Sunday morning is the most relaxing thing ever. I don’t normally fancy baking any other day as it feels such an effort but for some reason, Sunday mornings call for some baking. I always get up and think, perhaps I should bake something or make waffles or pancakes. Not sure why, but I always feel also like the kids are behaving better, I am less shouty (probably not true) and everything is just a little bit calmer. Yes, yes, there is no rush to pre-school or nursery or anything but still. There is no doubt that Sundays are my favourite day of the week, especially when I bake these beauties. Last Sunday the whole kitchen smelled like an apple pie.
The best thing with these vegan oatmeal cups is that they are super easy to make! But THE best things with these are that:
- You can have them for breakfast on the go (perfect when things are chaotic on a Monday morning and you are late for school runs, work, sitting in traffic)
- They are freezable (up to 3 months)
- Our toddlers love them (and I am pretty sure yours will too)

How to make vegan oatmeal cups with apple, turmeric and cinnamon
Pre-heat oven to 190c and grease the muffin tin with some coconut oil.
Add all ingredients, see the recipe card below, to a large bowl and mix well (mix really well, stir for a good few minutes) until everything is combined.
Put the mixture in the cups and bake for approximately 20 minutes.
That’s it! Super easy!

- 480g oats
- 2 teaspoons ground cinnamon
- 1 table spoon turmeric
- ½ black pepper
- ½ teaspoon salt
- 4 table spoons chia seeds
- 3 table spoons flaxseeds
- 600 ml almond milk
- 1 teaspoon baking soda
- 100ml Agave nectar
- 2 teaspoons vanilla extract
- 1 diced apple
