What do you do with overripe bananas? Banana bread! This banana bread is definitely a lovely treat. Not only is it dairy-free, egg-free and totally plant-based but it’s made with healthy unrefined oils and superfoods such as goji berries, turmeric, spelt flour, sunflower seeds and dark chocolate. We just love having this for breakfast as it’s naturally sweet and filling.

Health benefits of dark chocolate

Dark chocolate is cancer-fighting! Research suggest that dark chocolate can help lower the risk of lung, prostate and skin cancer as it’s packed with important antioxidant flavonols, polyphenols and proanthocyanidins all of which help to slow the growth of cancer cells. The higher the percentage of cacao, the higher the content of the above mentioned antioxidant components.

One bowl vegan banana bread recipe

Preheat the oven to 160c (320F or Gas Mark 3).

Grease a normal size loaf pan with coconut oil and set aside or use a disposable loaf tin liner.

All you need is one bowl!

Mash the bananas in a bowl. Then add the melted coconut oil, date nectar, yoghurt and vanilla extract and whisk for a minute. Add flour, baking soda, spices and salt and stir until the mixture looks like a paste. Add the chocolate chips, goji berries and sunflower seeds and stir for a minute or so.

Pour the paste into the greased pan/ loaf tin liner and bake for 60 minutes at 160c (320F or Gas Mark 3).

Ingredients

  • 3 mashed ripe bananas
  • 1/3 cup (or 75ml) coconut oil, melted
  • 2 table spoons of date nectar or Agave syrup or 2 table spoons of chopped dates
  • 1/4 cup (or 60ml) of coconut yoghurt (plant-based)
  • 1 teaspoon vanilla extract (unsweetened)
  • 1 ¾ cups (or 245g) spelt flour
  • 2 tea spoons cinnamon
  • 1 tea spoon of turmeric
  • 1 tea spoon baking soda
  • ½ tea spoon salt
  • 1/3 cup of organic dark chocolate chips (50g)
  • 2 table spoons goji berries
  • 2 table spoons sunflower seeds
