Beat the winter blues or any blues with these incredibly healthy vegan banana and blueberry muffins. It’s a known fact that January is a bit of a boring month for many – no money, diets, no wine and countless mediocre gym sessions. It can be a bit doom and gloom no doubt about it! So we have decided to cheer us and (hopefully) you up with this yummy and healthy muffin recipe.

These beauties are just perfect for breakfast on the go or as an afternoon treat with a cuppa. They are a great option when you are craving something sweet and indulgent.

There is no dairy here, no egg, no refined sugar…these are made with superfoods such as spelt flour, chia seeds, linseeds/flaxseeds, blueberries, bananas, cinnamon!

How to make vegan banana blueberry muffins

Pre-heat the oven to 180c (350F).

Mash bananas in a large mixing bowl. Add Agave, oat milk and the ‘chia egg’ and mix well. Add melted coconut oil and continue to stir.

Combine all dry ingredients and cinnamon and gently stir into banana mixture.  Add blueberries at the end if frozen, be gentle and do not over mix, just fold them in. Pour into 8 muffin cups and sprinkle some oats on top. Bake at 180c for 25 minutes.

Bananas have great health benefits. They are packed with essential vitamins and minerals such as potassium, calcium, manganese, magnesium, iron, folate, niacin, riboflavin, and B6. Blueberries are not only super tasty, they are incredibly antioxidant. Nevertheless they are a very powerful anti-cancer food as they help stop oxidative stress and DNA damage. Latest research suggest that blueberries have been shown to induce cell death in breast cancer cells.

Ingredients

  • 2 ripe bananas
  • 1 cup blueberries (we used frozen but you can use fresh as well)
  • 1 chia egg - 1 table spoon of chia seeds mixed with 2 ½ table spoon of water
  • 1 ½ cups spelt flour
  • 1 table spoon of linseeds/flaxseeds
  • 2 tea spoons cinnamon
  • 1 teaspoon baking soda
  • 1/3 cup coconut oil (melted)
  • 1/2 cup oat milk
  • 3 table spoons Agave or Maple syrup or Manuka honey
  • A handful of organic oats (sprinkle on top)
