Sweet potato chips with Avocado Aioli

The best thing with this is sharing or side dish is the avocado aioli. The sweet potato wedges are also pretty good but this dip definitely steels the show. It’s green, garlicky, saucy, creamy, healthy and totally perfect.

Avocado, spinach, garlic, lemon or lime juice – well that’s all you need to create this super delicious avocado-based plant-based/vegan aioli recipe. And, the best this is that it is 100% naughty-free.

Let’s explain why.

The main ingredient is avocado which is full of goodness and healthy fats. In fact, avocados are one of the great anti-cancer foods as they are incredibly rich in a multiplicity of nutrients, including many antioxidants and phytochemicals as well as vitamins, minerals, fibre and monounsaturated healthy fats.

Spinach is a superfood and is known for its energy-boosting capabilities and it has excellent sources of iron to replenish our body’s stores. Spinach is also incredibly anti-cancer as it is rich in chlorophyll, carotene, iron, folic acid, vitamins and minerals that are crucial for cancer preventing and fighting cancer.

Garlic is a plant in the Allium (onion) family and is one of the best anti-cancer foods if not the best. Garlic is rich in manganese, vitamin B6, vitamin C, selenium, fibre and contains also calcium, copper, potassium, phosphorus, iron and vitamin B1 – which are all crucial for your anti-cancer diet.  Garlic is also great for reducing blood pressure, lowering the risk of heart disease and helping detoxify the body from free radicals and heavy metals. Additionally, several studies have shown a link between increased intake of garlic and reduced risk of certain cancers, including breast cancer.

Lemons are a good source of vitamin C and they are rich in anti-cancer compound such as like limonene, especially in their peels. Lemon also support heart health and may prevent kidney stones.

Lemon and garlic together are very powerful. Studies have shown that combining garlic and lemon extracts help increase the anti-cancer activity of garlic.

How to make oven-baked sweet potato chips

These are so simple to make. And,  oven-roasting is our favourite way to cook these vegetables. What you need to do is just wash the sweet potatoes and cut them up into chunky chips. Put them in a large bowl and add olive oil, smoked paprika, onion granules and season with salt and pepper. Mix well, use a spoon or your hands. Then in the oven for about 20 minutes at 200c (400F).

Sweet potatoes are one of the top cancer fighting too as they are rich in anthocyanin. Anthocyanins are a type of flavonoid, a class of compounds with brilliant antioxidant effects.

Ingredients

  • For the avocado aioli:
  • 1 large avocado (halved and pitted)⁣
  • 1 large garlic clove crushed and minced ⁣
  • A (generous) handful of fresh spinach ⁣
  • A (generous) dash of olive oil⁣
  • 1 table spoon of lemon juice⁣ (or lime juice)
  • A pinch of salt & pepper⁣
  • For the sweet potato chips:
  • 4 large sweet potatoes
  • 1 table spoon of olive oil
  • 2 tea spoons of smoked paprika
  • 1 tea spoon of onion granules
  • Salt & pepper to season

Instructions

Start with making the sweet potato chips. Wash them thoroughly, cut them into chips, and cover in olive oil, smoked paprika, onion granules, and salt & pepper. Place them on a baking sheet and bake for 20 minutes at 200c (400F).

While the chips are baking, make the avocado aioli.
Just blitz all the ingredients using your food processor until smooth and you have a super healthy dipping sauce.
