VEGAN AVOCADO TOAST (HEALTHY + EASY)

We are addicted to this vegan avocado toast at the moment. Firstly, it’s so easy to make and secondly, it’s so ridiculously tasty and good for our health. Saying that you can’t just smash avocado and leave it on its own. If you do, your toast will end up tasting a little bit bland. In our opinion it needs something more. Perhaps something flavoursome and herby – our vegan seed and oregano parmesan!

The easiest, tastiest, healthiest vegan avocado toast recipe

Have this gorgeous avocado toast for breakfast, brunch or snack. It’s done in 5 minutes with just 10 ingredients. This recipe is so easy and delicious it will make you start having brunch parties with your friends and family every weekend at home. No hassle with poached eggs or eggs Benedicts or hollandaise sauce or other classic toast recipes – this recipe is simple, looks impressive and so good for you. You only need one bowl, 10 ingredients and 5 minutes.

To make this is honestly so easy. Smash the avocado in a bowl, we always leave it a bit chunky but it’s up to you how you like it. Then make the most delicious vegan seedy parmesan. What you need is 6 ingredients – oregano, nutritional yeast, garlic granules, pumpkin seeds, linseeds/flaxseeds and some panko. Add all these ingredients into a food processor and blitz/mill and it’s done.

Plate up – put avocado on your toast, we like sourdough, and finish it off by sprinkling a table spoon of vegan seed and herb parmesan and pumpkin seeds on top. Garnish with some fresh oregano leaves and a drizzle of olive oil. If you don’t have fresh oregano leaves, you can use some rocket leaves or watercress leaves on top or on the side.

Oregano is one of the best anti-cancer herbs
We have chosen to use oregano in this recipe because it’s works beautifully taste wise but more importantly it’s one of the best anti-cancer and cancer preventing herb we can eat. It’s good to know that oregano has higher antioxidant contents than fruits and vegetables. It also contains carvacrol, an important molecule that may stop the spread of cancer cells by working as a natural disinfectant. A plant flavonoid in oregano called Quercetin has shown that it can slow cancer growth as well as promote cell death. Other Mediterranean herbs that contain carvacrol are thyme, basil, parsley, marjoram, and mint.

So by adding oregano, pumpkin seeds, nutritional yeast this avocado toast becomes super flavoursome plus incredibly nutritious. Just perfect for those brunch moments when you want to impress but also keeping it simple and healthy.

Ingredients

  • 2 avocados
  • 2 sourdough slices or spelt flour toast or toast of your choice
  • 2 table spoons pumpkin seeds
  • 2 table spoons oregano leaves
  • Olive oil for drizzling on top
  • For the vegan parmesan:
  • 2 table spoons of panko ⁣
  • 1 table spoon nutritional yeast ⁣
  • 1 table spoon pumpkin seeds⁣
  • 1 table spoon ground linseeds/flaxseeds⁣
  • 1/4 tea spoon garlic granules⁣
  • 1/4 tea spoon sea salt ⁣
  • 1 tea spoon oregano ⁣(dried)

Instructions

Mash the avocados in a bowl. We like it chunky but you can also make it quite smooth.

Mill all the vegan parmesan ingredients using your blender.

Toast the sourdough using a toaster or in the oven.

Plate up by spreading the mashed avocado on the toasted bread. Sprinkle the vegan seed & herb parmesan and garnish with pumpkin seeds and fresh oregano leaves. Lastly drizzle some olive oil on top and serve.
